Grilled Veggies Galore

I can almost hear the sizzle of the grill and smell the aromas wafting through the air as summer quickly approaches. It's that time of year again – grilling season. So dust off that grill! This season, try grilling some vegetables and expand your grilling beyond carnivorous BBQ and brats into complete, well-balanced meals. Some of you may have had a bad experience with vegetables sticking or falling through the grill grates. If this is the case, always make sure you oil the grill grate, and try using skewers or a grill basket (oil this too). Now that you know how to properly set up your grill, here are some tasty marinades for making grilled vegetables even more delicious:

Step 1: Slice vegetables (zucchini, mushrooms, peppers, and onions are great for grilling)

Step 2: Select a marinade and pour over vegetables

Step 3: Let marinate for 30 minutes – 1 hour

Step 4: Place vegetables directly on grill or on skewers. Cook 2-3 minutes each side or until cooked to desired doneness. Brush with extra marinade and enjoy.


Citrus Cilantro

4 tablespoons olive oil
¼ cup orange juice
2 tablespoons orange zest
2 tablespoons chopped fresh cilantro (or buy bottled cilantro in produce section)


Soy Ginger

4 tablespoons light soy sauce
¼ cup rice wine vinegar
4 teaspoons minced bottled ginger
2 teaspoon sesame oil


Lemon & Garlic

2 tablespoon olive oil
¼ cup lemon juice
2 tablespoons lemon zest
1 tablespoon minced garlic
2 tablespoons Italian Seasoning
Salt and pepper to taste
