Harvest-Time Gluten Free Fruit Crisp

This delightfully sweet yet light dessert is the perfect way to end a late summer backyard barbeque or take to a Labor Day get-together without overindulging. Any combination of fresh seasonal apples, berries, cherries, pears, or peaches can be used, taking advantage of the fruits’ natural sweetness. My favorite combinations are apple (Honey Crisp or Granny Smith are good baking apples) with blackberries, pear with blueberries, or peaches with raspberries.

Gluten Free Fruit Crisp

Prep time: 15 minutes

Cook time: 45 minutes

Total time: 60 minutes

Ingredients

Fruit Base:

  • 2-3 medium apples or pears, sliced
  • 2 cups berries
  • 1 tbsp Maple Syrup or honey (omit for low-sugar/low-carb diets)
  • 1 tsp cinnamon

Topping:

  • 1 cup almond or hazelnut flour
  • ¾ cup coconut flour
  • 1 cup finely chopped pecans
  • 1 tsp cinnamon
  • 1 tsp salt
  • ½ cup coconut oil, melted

Note: The amount of fruit will vary depending on the type used. Quantities are approximate.

Directions

  1. Preheat oven to 350° F.
  2. Slice fruit. Peel if needed.
  3. Layer fruit in a 13 x 9” glass baking dish, coated with cooking spray or coconut oil.
  4. Sprinkle fruit with maple syrup and cinnamon. Mix gently to evenly coat fruit.
  5. In a medium mixing bowl, combine ingredients for topping and stir to combine. Large clumps may form, which is fine.
  6. Pour over fruit base.
  7. Bake for 40-45 minutes or until topping is browned.
